Josh hand-harvested this fruit from our CCOF Certified Organic estate vineyard, and loaded it all in the back of our truck one fall morning. This incredibly small-lot rosé was crafted with precision and care. Whole clusters of Grenache were gently pressed and transferred directly to our 80-gallon terracotta amphora. Our two amphoras (one mini for the Grenache rosé and one medium for the Vermentino) live in the chilled barrel room where the juice is kept at a cool temperature. Keeping the juice cold allows for a slow fermentation that helps to preserve aromas and flavors of the wine. The amphora’s natural convection stirs the wine, enhancing texture while allowing it to develop in a pure, minimalist process. Fermenting in the amphora helps preserve its freshness while naturally stirring the wine throughout the aging process. This ancient vessel enhances minerality and gives texture while allowing the varietal to shine without interference.

On the nose, expect dusty strawberries, wild raspberries, and a hint of orange zest. The palate is juicy and vibrant, offering flavors of juicy cherry, pomegranates and early strawberry with a touch of spice. The finish is crisp, coating the tongue with bright red fruit and a refreshing snap of acidity. Like a summer sunset in your glass — pure, joyful, and effortlessly elegant.

Pair this live­ly rosé with pro­sciut­to-wrapped aspara­gus and goat cheese, and share it with good friends in the gold­en glow of a late after­noon. We always share this bot­tle with a cheese plate and when­ev­er pos­si­ble, local Mor­ro Bay oys­ters. This wine is cur­rent­ly secured to mem­bers only — we only made 40 cas­es, and it dis­ap­pears faster than a per­fect beach day.
