Introducing Hippie Hill 2022, a wine that embodies the terroir of Thibido Vineyard’s organic soils and the true spirit of our hands-on winemaking process. Crafted from 67% Mourvèdre, 18% Syrah, 13% Grenache, 2% Carignan, this earthy, complex blend draws fruit from our CCOF Certified Organic estate vineyard in Paso Robles’ Willow Creek District. Each grape was carefully harvested over a four-week period, fermented in open-top vessels with native yeasts, and meticulously hand-punched down two times per day. The result is a wine that showcases the essence of the vineyard, from its unique soil profile to the thoughtful blending and traditional winemaking techniques that have shaped it.

Hippie Hill 2022 bursts with aromas of fresh roses, strawberries, and earthy notes of dusty forest floor, sage, and mocha. The gamey, herbal undertones offer a sensory journey through Thibido’s terroir, telling the story of the land in every inhale.
