Extended fermentation and barrel age take the 2021 Just Because to another level. The second vintage of this wine received three additional weeks of carbonic fermentation for a total of ten weeks! The extended fermentation enhanced every flavor and aroma in this wine. Whole clusters soaking in their own juice during fermentation improved tannin to the mouth feel and increases the wine’s longevity in your cellar. Extra skin and stem time also heightened the aromas and color.
Color — deep purple to the core. The dark hue extends out to the edge where it turns to a beautiful violet hue.
Aromas — blueberries, assortment of spices, dusty earth tones, sage, grilled meats and a hint of toasty smoke
Taste — green olive, mild to firm tannin across the palate from front to back, black raspberries, tart jammy fruits, black licorice and tobacco.
