Why make Syrah this way? Just Because.

Since launching Thibido Winery in 2019, we’ve made this small-production carbonic Syrah as an unexpected expression of one of Paso Robles’ most celebrated varieties. Sourced from Homestead Hill Vineyard in the Willow Creek District, Just Because 2025 turns the usual idea of Syrah on its head: vibrant, fresh, light on its feet, and bursting with juicy character.

Sourced from organically farmed Homestead Hill Vineyard, this 100% Syrah was crafted with patience and a touch of daring. After hand-selecting only the best clusters, Josh hand-selected premium whole clusters and carefully loaded them into the fermentation vessel before sealing it up and leaving it completely untouched for ten weeks.

No added yeast. No nutrients. No sulfur. No punchdowns or pumpovers. Just whole clusters, time, and the natural fermentation of the fruit. After fermentation, the grapes were gently whole-cluster pressed directly into neutral French oak 300-liter barrels for aging. The result is a remarkably fresh and expressive Syrah that lets the fruit — and this unconventional winemaking approach — take center stage. Just 30 cases available to club members first.

Electric purple in the glass, Just Because 2025 opens with hints of fresh green herbs and bright red fruit. The palate is unmistakably Syrah, but in a lighter and more playful expression, with juicy red fruit, refreshing lift, and a cool-climate character that is surprisingly hard to find in Paso Robles.

Light and silky, with easy, juicy tannins that make this a very drinkable red. Fresh and energetic, the wine finishes with lingering red fruit and herbal notes that invite another sip.

Just Because is the kind of red that doesn’t need a complicated meal. Grilled chicken, herbed sausage, roast vegetables, or a simple cheeseboard all make easy pairings. For something unexpected, try it with crispy fish tacos—the wine’s bright fruit and light tannins work beautifully with fresh fish, herbs, lime, and a little heat echo its vibrant, herbal character.

At just 12.8% ABV, this is the bottle to reach for when you want red wine that feels fresh, unfussy, and ready for another glass.
