Best Day Rosé 2024: Grenache, Amphora, and Intention

Best Day Rosé begins in our CCOF Cer­ti­fied Organ­ic Thibido Estate Vine­yard, where farm­ing is guid­ed by long-term think­ing rather than short-term gain. Every deci­sion in the vine­yard is made with an eye toward soil health, bal­ance, and longevi­ty — because the best wines come from vine­yards that are cared for, not pushed.

Grenache thrives here, respond­ing beau­ti­ful­ly to Paso Rob­les’ warm days and cool evenings. Its trans­paren­cy makes it an ide­al grape for express­ing both place and phi­los­o­phy. By farm­ing organ­i­cal­ly and har­vest­ing by hand, we allow the vine­yard to speak clear­ly — with­out short­cuts, cor­rec­tions, or cos­met­ic adjustments.

The fruit for this rosé was hand-har­vest­ed by own­er Josh Beck­ett and his crew in the ear­ly days of fall and loaded straight into the back of our truck. It’s a small detail, but one that reflects some­thing larg­er: stay­ing close to the process, remain­ing account­able at every step, and nev­er los­ing sight of where the wine begins.

Curiosity in the Cellar: Amphora as a Tool, Not a Statement

Once in the win­ery, whole clus­ters of Grenache were gen­tly pressed, extract­ing just enough col­or to achieve its nat­u­ral­ly rosy pink hue — vibrant, del­i­cate, and honest.

The juice was trans­ferred direct­ly into our small­est 80-gal­lon ter­ra­cot­ta ampho­ra, a ves­sel we use inten­tion­al­ly and spar­ing­ly. For us, ampho­ra isn’t about nov­el­ty; it’s about curios­i­ty and restraint. It’s a way to explore tex­ture and min­er­al­i­ty while allow­ing the vari­etal to remain the focus.

Our amphoras main­tain cool tem­per­a­tures, slow fer­men­ta­tion and pre­serve aro­mat­ic lift. The amphora’s nat­ur­al con­vec­tion gen­tly stirs the wine through­out fer­men­ta­tion and aging, build­ing tex­ture with­out heav­i­ness. The result is a rosé that feels both fresh and com­plete — shaped by time and patience rather than manip­u­la­tion. This min­i­mal­ist approach reflects our belief that wine should be guid­ed, not forced.

In the Glass: Clar­i­ty, Bal­ance, and Ease

On the nose, dusty straw­ber­ries, wild rasp­ber­ries, and a hint of orange zest rise from the glass with qui­et confidence.

The palate is juicy and vibrant, lay­ered with cher­ry, pome­gran­ate, and ear­ly straw­ber­ry, fol­lowed by a sub­tle touch of spice. Mouth­wa­ter­ing acid­i­ty car­ries the wine through a crisp, refresh­ing fin­ish that coats the tongue with bright red fruit and a clean snap of energy.

The Thibido Best Day Rosé 2024 is a reflec­tion of what mat­ters most to us: car­ing for the land, stay­ing curi­ous in the cel­lar, hon­or­ing fam­i­ly tra­di­tion, and cre­at­ing wines that bring peo­ple together.

We only pro­duce about 35 cas­es of this wine each vin­tage, lim­it­ed by the small ampho­ra we use for vini­fi­ca­tion and aging. This wine is always offered exclu­sivle­ly to wine club mem­bers.
