Some wines are born from opportunity, others from destiny. The Only 2024 is both. We feel so fortunate to have procured fruit from such a renowned vineyard! This 100% Roussanne was hand-picked from just three rows in a coveted block at Bien Nacido Vineyard, one of California’s most revered sites, often compared to Grand Cru vineyards in Burgundy. This famous vineyard was named one of the Top 25 Vineyards in the World” by Wine & Spirits and Wine Enthusiast Magazine proclaimed it one of the Top Grand Cru Vineyards in California”. Roussanne is a rare gem in California and thrives in cool mornings and ocean-kissed breezes, developing layers of richness while maintaining vibrant acidity. At every step, we handled this fruit with the reverence it deserves — gentle, whole-cluster pressing followed by fermentation in a mix of stainless steel neutral neutral French oak. Post-fermentation, the wine was partially aged in a 300L neutral French Oak barrel and then introduced to a lightly toasted new 300L French oak barrel, enhancing its depth of flavor and texture while preserving the beauty of the fruit.

Pour a glass, and the first thing you’ll notice is its golden hay color, shimmering like late afternoon sun. Roussanne can be made in a variety of styles and we aimed to strike the perfect balance of mouth feel and weight with pleasant acidity and bright fruit. On the nose, delicate aromas of honeycomb, green apple, and lemon zest give way to deeper notes of roasted almond and wet stone. The palate is luxurious yet precise — silky and full-bodied, with a creamy texture that’s lifted by a gentle thread of acidity. A touch of new oak adds elements of baking spice and a long, refined finish. While irresistibly drinkable now, its layered complexity suggests graceful aging for those patient enough to cellar a few bottles.

This is a wine meant for indul­gence — whether that means savor­ing it over an extrav­a­gant meal or steal­ing a qui­et moment just for your­self. A rich but­ter­nut squash risot­to with sage and brown but­ter would enhance the hon­ey­comb and apple fla­vors while cut­ting through the rich­ness of the food with nice acid. Roast­ed chick­en with a creamy thyme pota­to gratin would be a great way to cel­e­brate the beau­ty of this wine at your table. We sug­gest serv­ing it slight­ly chilled and find­ing time to pon­der the com­plex­i­ty of this wine.
