A Thibido Thanksgiving: Pairing the New Wines

Holiday Favorites

This fall, our club ship­ment brings you all new Thibido releas­es — each one telling a piece of our sto­ry. In antic­i­pa­tion of Thanks­giv­ing, I thought it would be fun to pair each new wine with a clas­sic dish from the feast. ‑Gib­sey

THE ONLY 2024 — 100% Roussanne

Radi­ant and creamy, with cit­rus, hon­eyed wax, and toast­ed-almond nuance — del­i­cate and tex­tured. This wine is my new favorite full-bod­ied white to kick off an evening and I enjoy it with or with­out food.
Pair with: Can­died sweet pota­toes or clas­sic mashed pota­toes— I always make the pota­toes two days ahead, and I like to stir in pressed gar­lic and a big dol­lop of cream cheese for extra silk­i­ness and a tangy lift. The wine’s gen­tle tex­ture mir­rors the rich­ness of these sides while its bright cit­rus notes bal­ance out the but­ter and cream.

Red Wine and Autumn Greens

JUST BECAUSE 2024 — Carbonic Syrah

Play­ful and ele­gant, burst­ing with red fruits, herbal lift, and silky, easy tan­nins — joy­ful and total­ly club-exclu­sive. Our low­est alco­hol red wine ever made, Just Because clocks in at just 12.8% ABV.
Pair with: An autumn sal­ad with mixed greens, sliced pears and per­sim­mons, pome­gran­ates, crum­bled goat cheese and toast­ed pecans — a bright, crisp first-course pair­ing that mir­rors the wine’s lift and gen­tle spice. I love a col­or­ful sal­ad with lots of goodies!

Just Because

Heritage Fruit and Hearty Mains

ROOTBOUND 2023 — Carignan – Zinfandel blend

Spice and dark fruit, a smoky drift, with rich ener­gy and a savory back­bone — a wine root­ed in our lega­cy grape. Zin­fan­del is what we’ve been raised on and our estate vine­yard fea­tures three blocks of CCOF Cer­ti­fied Organ­ic Zin. This new label is a big win­ner in my book!
Pair with: Glazed ham, sausage-and-herb stuff­ing, or roast­ed Brus­sels sprouts with a bacon glaze. This wine loves depth — think caramelized bits from the pan, smoky edges, and savory drip­pings. It’s the per­fect match for those hearti­er dish­es that bring both sweet and savory notes to the table.

HIPPIE HILL 2023 — Estate Mourvèdre-based red blend

Bold and soul­ful — this pop­u­lar wine offers leather, smoked meats, choco­late cher­ries, vio­lets, and min­er­al edge.
Pair with: Turkey, mush­room gravy, or sage-but­ter­nut stuff­ing. When I make gravy, I use the drip­pings from the roast­ing pan, deglaze with white wine and turkey stock, and swirl in a big pat of but­ter at the end. The earthy, uma­mi depth mir­rors the wine’s herbal notes and savory streak.

Special Wines, Special Guests

THE BEDFELLOW 2023 ‑Syrah blend

Juicy berries, pep­pery spice, a hint of smoke, and an ele­gant back­bone — com­plex but pleas­ing from the first sip. This new 2023 deserves patience, open it a few hours before din­ner and let the wine’s aro­mat­ics expand and devel­op before din­ner.
Pair with: Roast turkey breast brushed with gar­lic-herb com­pound but­ter or a wild mush­room and sage ragout. The bright fruit and pep­per of the wine com­ple­ment the butter’s rich­ness and the herbal tones of the sage. It’s a seam­less bridge between white and dark meats — the kind of wine you can sip through the whole meal.
