A Thibido Thanksgiving: Pairing the New Wines


Holiday Favorites
This fall, our club shipment brings you all new Thibido releases — each one telling a piece of our story. In anticipation of Thanksgiving, I thought it would be fun to pair each new wine with a classic dish from the feast. ‑Gibsey
THE ONLY 2024 — 100% Roussanne
Radiant and creamy, with citrus, honeyed wax, and toasted-almond nuance — delicate and textured. This wine is my new favorite full-bodied white to kick off an evening and I enjoy it with or without food.
Pair with: Candied sweet potatoes or classic mashed potatoes— I always make the potatoes two days ahead, and I like to stir in pressed garlic and a big dollop of cream cheese for extra silkiness and a tangy lift. The wine’s gentle texture mirrors the richness of these sides while its bright citrus notes balance out the butter and cream.

Red Wine and Autumn Greens
JUST BECAUSE 2024 — Carbonic Syrah
Playful and elegant, bursting with red fruits, herbal lift, and silky, easy tannins — joyful and totally club-exclusive. Our lowest alcohol red wine ever made, Just Because clocks in at just 12.8% ABV.
Pair with: An autumn salad with mixed greens, sliced pears and persimmons, pomegranates, crumbled goat cheese and toasted pecans — a bright, crisp first-course pairing that mirrors the wine’s lift and gentle spice. I love a colorful salad with lots of goodies!


Heritage Fruit and Hearty Mains
ROOTBOUND 2023 — Carignan – Zinfandel blend
Spice and dark fruit, a smoky drift, with rich energy and a savory backbone — a wine rooted in our legacy grape. Zinfandel is what we’ve been raised on and our estate vineyard features three blocks of CCOF Certified Organic Zin. This new label is a big winner in my book!
Pair with: Glazed ham, sausage-and-herb stuffing, or roasted Brussels sprouts with a bacon glaze. This wine loves depth — think caramelized bits from the pan, smoky edges, and savory drippings. It’s the perfect match for those heartier dishes that bring both sweet and savory notes to the table.


Hippie Holiday Pairings
HIPPIE HILL 2023 — Estate Mourvèdre-based red blend
Bold and soulful — this popular wine offers leather, smoked meats, chocolate cherries, violets, and mineral edge.
Pair with: Turkey, mushroom gravy, or sage-butternut stuffing. When I make gravy, I use the drippings from the roasting pan, deglaze with white wine and turkey stock, and swirl in a big pat of butter at the end. The earthy, umami depth mirrors the wine’s herbal notes and savory streak.

Special Wines, Special Guests
THE BEDFELLOW 2023 ‑Syrah blend
Juicy berries, peppery spice, a hint of smoke, and an elegant backbone — complex but pleasing from the first sip. This new 2023 deserves patience, open it a few hours before dinner and let the wine’s aromatics expand and develop before dinner.
Pair with: Roast turkey breast brushed with garlic-herb compound butter or a wild mushroom and sage ragout. The bright fruit and pepper of the wine complement the butter’s richness and the herbal tones of the sage. It’s a seamless bridge between white and dark meats — the kind of wine you can sip through the whole meal.
